Spinach Lasagna Rolls

Ingredients

-9 Lasagna noodles--cooked!
-10 oz. frozen chopped spinach, thawed and completely drained
-15 oz. fat free ricotta cheese
-1/2 cup grated Parmesan cheese
-1 egg
-add your own amount of salt and pepper
-2 cups of pomodoro sauce
-9 tbsp part skim mozzarella cheese, shredded

Directions

-Preheat your oven to 350'! While the oven is heating up combine your spinach, ricotta cheese, parmesan cheese, the egg, and salt and pepper to taste in a bowl!
-Take your baking dish and ladle 1 cup of sauce on the bottom!
-Lay each lasagna noodle out and take 1/3 cup of the cheese and spinach mixture. Spread this mix evenly on the noodle. From there roll the noodle carefully and then place the roll seam side down onto the baking dish! In total there will be 9 noodles! ---I had some mix left over
-Ladle some sauce over the noodles then add a tbsp of mozzarella cheese on each!
-Place foil over the baking dish-- I didn't do this--whoops! And Bake for 40 minutes!
